Portobello Sandwich Cup

Portobello Sandwich Cup
  • 1 large Portobello mushroom, brush with olive oil and grill or sauté until slightly charred. This can be done in advance
  • 1–2 tbsp. hummus
  • 4-5 cucumber slices
  • sliced red onion
  • chopped kalamata olives
  1. Spread hummus on Portobello mushroom, top with rest of the ingredients and enjoy! Eat like an open-faced sandwich or with a fork and knife
